Potato and Thyme Chicken Recipe
1 Potato (about 180g)
120g of unsalted boneless skinless chicken fillet
A half teaspoon of dried or fresh Thyme

We are going to use the microwave here because baking in the oven can take a lot of your time. If you are not making for the whole family, the microwave is the more favourable cooking appliance. First of all, wash the potato, dry and prick the potato skin with a fork in several places. Set the microwave to 15 minutes, until the potato becomes soft. While the potato is cooking, start preparing the chicken. Cut the chicken into bite sized cubes (approx. 1 ½ cm), add a half teaspoon of dried Thyme to the chicken to marinate it. Leave it for a minute. Heat the non-stick pan, add 2 tbsp of olive oil. When oil is ready, put the marinated chicken into the pan. Stir the chicken and add 1/3 cup of water. The chicken is ready to serve when it is no longer pink. Let the potato cool down for a few minutes, peel off the skin. Mash it, you do not need to puree the potato here since your baby will have a few teeth by now. If needed add formula or breast milk to moisten the mash potato. Chicken can be their finger food as well.
